Ensure proper operation of equipment. Establish employee training, recognition and discipline programs. Develop/meet labor/cost control measures. Maintain professional proficiency. Execute other duties as assigned or deemed appropriate for the efficient operation in support of the overall property mission. SPECIFIC TASKS: (asterisks represent essential elements of the job) · Supervise food and beverage employees including setting, maintaining and enforcing health, sanitation, corporate, and company standards; OSHA and employment/labor law.* · Ensure employee and guest safety. · Interview, hire, train, assign, evaluate, counsel and discipline employees. Train employees using, at least, the corporate mandated guidelines to certify staff no later than 90-days after hire. Conduct initial employee, one on one counseling within 48 hours of hire. Maintain documentation. Complete termination documentation within 24 hours of separation.* · Ensure established food service procedures are followed. Correct discrepancies immediately.* · Meet food and beverage sales and payroll cost goals and achieve corporate QA goals. · Patrol restaurant and lounge during peak periods. Visit tables/survey guests to ensure utmost customer service. Resolve complaints immediately. · Prepare work schedules at least three (3) days in advance. Verify payroll weekly. · Monitor the adequate supply of uniforms. Requisition supplies through the Chef. Ensure equipment is in proper working order or coordinate repair with maintenance. · Maintain 100% beer/liquor control. Conduct end-of-the-month beer/liquor inventory.* · Research and recommend improvements to increase revenue and improve guest loyalty. · Successfully complete all training within the allotted timeframes. Become CFBE certified when requested to do so and complete certification within the allotted timeframe. · Ensure underage patrons are not served alcoholic beverages. SUPERVISION RECEIVED: (Direct) AGM (Indirect) GM SUPERVISION EXERCISED: All F&B Staff MINIMUM POSITION REQUIREMENTS: · Education: High school graduate. Vocational training in customer service and food and beverage operations preferred. · Experience: Two to four years experience in food and beverage operations preferably in the hospitality/service industry. At least two years supervisory experience required. · Knowledge: General dining, lounge and bar operations. Specific knowledge of food and beverage operations including health/sanitation/safety regulations. Familiarity with hotel operations preferred. Basic understanding of OSHA policies preferred. · Special skills: Ability to communicate effectively, establish rapport with employees. Reliable judgement and temperament. Appropriate math/analytical skills. · Physical: Moderately demanding position. Prolonged standing and walking. Must be able to lift and carry 30 lbs. unassisted.
